Hotel La Vigne Hakuba will host a special dinner event with accommodation on Saturday, June 21, 2025. We welcome three winemakers who laid the foundation of Japanese wine, offering a unique evening featuring 9 exceptional wines including rare back vintages, paired with French cuisine by Chef Imanishi that showcases Hakuba’s seasonal ingredients and embodies the spirit of Onko Chishin.

In recent years, global attention to Japanese food culture and Japanese wine has been growing. As a symbol of this, at the international wine list awards Star Wine List of the Year Awards Japan 2025 held for the first time in April this year, LA VIGNE DINING FUDO, the restaurant at our hotel, achieved a remarkable feat by winning gold in the New List category and silver in both the Japanese Wine List and Short List categories. We are hosting this special dinner event as an opportunity for more people to experience the charm of Japanese wine. On the day, we will welcome three winemakers who laid the foundation of Japanese wine, offering 9 carefully selected exceptional wines ranging from back vintages to the latest vintages from each winery.

A lineup that allows you to taste the past, present, and future of Japanese wine all at once, expressing Onko Chishin.

Complementing each glass is a one-night-only special dinner course by Chef Imanishi. Each dish expresses Onko Chishin’s French cuisine that harmonizes with the character of each wine, rooted in tradition yet enhanced with innovation.

Introduction of Winery Guests Attending the Event

Nagano・Obuse Winery Mr. Akihiko Soga

Obuse Winery, a family-run winery located in Obuse Town, Nagano Prefecture, was founded in 1867 as Obuse Brewery, began wine production in 1942, and since 1995 has focused on European grape varieties, gradually expanding its own vineyards and aiming to become a small domaine like those in Burgundy.

Yamagata・Takeda Winery Ms. Noriko Kishihira

Founded in 1920 and located in Kaminoyama City, Yamagata Prefecture, Takeda Winery upholds “winemaking rooted in Japan’s terroir” and has continuously inherited grape cultivation and wine production starting from soil preparation. In 1989, they became the first in Japan to produce sparkling wine using the Champagne method.

Yamanashi・Kizanyoushu Industry Mr. Kozo Tsuchiya

Founded in 1937 and located in Kofu City, Yamanashi Prefecture, Kizan Wine from Kizanyoushu Industry uses primarily grapes from their own vineyard and exclusively grapes cultivated in the Higashi-Yamanashi district, making it truly Yamanashi wine. This family-run winery aims to create wines rooted in the local community and cultivates primarily European varieties such as Chardonnay and Merlot in their own vineyard.

About Chef Yamato Imanishi

Born in 1988 in Kochi Prefecture. After graduating as valedictorian from École Tsuji Osaka, he went to France at age 20. He trained at the renowned “Michel Bras” in Laguiole village and honed his skills at “Septime” and “Le Chateaubriand” in Paris, serving as section chef at each. Notably, during his time at “Le Chateaubriand” in 2011, the restaurant ranked 9th in “The World’s 50 Best Restaurants.” He gained experience at 5 restaurants in total, including Michelin three-star establishments, and after returning to Japan, served as chef at multiple restaurants. In April 2025, he joined Onkochishin Co., Ltd. and became head chef of “LA VIGNE DINING FUDO,” the restaurant at Hotel La Vigne Hakuba.
